Oatmeal Lace Cookies

Oatmeal Lace Cookies

Yield: About six dozen cookies

Ingredients

  • ½ cup flour
  • ¼ tsp baking Powder
  • ½ cup sugar
  • ½ cup quick cooking oats
  • 2 Tbsp heavy cream
  • 2 Tbsp light corn syrup
  • 1/3 cup melted butter or margarine
  • 1 tsp vanilla

Directions

  • Preheat oven to 375 Fahrenheit.
  • Sift flour, sugar and baking powder together into a bowl.
  • Mix together until well blended.
  • Add quick-cooking oats.
  • Mix together the cream, corn syrup butter and vanilla.
  • Add the cream mixture to the flour/oatmeal mixture.
  • Using ¼ tsp measuring spoon, drop onto an ungreased (or parchment-lined) baking sheet 2” apart.
  • Bake in oven for 6 to 8 minutes, until lightly browned.
  • Allow to stand a few seconds before removing from the pan.
